Charlotte's pie lovers have a new reason to celebrate.
After years of building a devoted following at local farmers markets, Thoughtful Baking Co. has officially opened its first permanent storefront at 4418 Monroe Road, Suite A.
For longtime fans, this opening feels less like a new business launch and more like a homecoming.
What started as a pandemic-era side venture has grown into one of Charlotte's most beloved comfort food brands, known for scratch-made quiches, savory pot pies, and seasonal desserts that showcase the best ingredients North Carolina has to offer.
🥧 From Farmers Markets to a Permanent Home
Back in 2020, while many businesses were slowing down, Chef Mary Jayne Wilson was building something new.
Drawing on years of culinary experience, she began creating farm-to-table comfort food that people could enjoy at home.
She started selling at local farmers markets, including the Uptown Farmers Market, where customers quickly became regulars.
Soon, shoppers weren't just buying pies.
They were planning their weekends around finding them.

Demand grew so quickly that Wilson eventually launched a Farm-to-Fridge vending machine to help keep up.
Now, with a permanent 3,500-square-foot storefront, she finally has room to expand production, serve customers directly, and host future baking classes.
👩🍳 Meet Chef Mary Jayne Wilson
Charlotte food lovers may already recognize Wilson's name.
Before launching Thoughtful Baking Co., she served as Executive Chef at Amélie's French Bakery, where she spent years mastering croissants, macarons, and other classic pastries.
But her passion has always been comfort food.
Her vision was simple: take the same level of craftsmanship used in fine pastry and apply it to foods people crave every day.
Think chicken pot pie.
Think seasonal quiche.
Think fruit pies made with ingredients sourced directly from North Carolina farms.
☕ More Than Just Pie

While pie may be what gets people through the door, it's far from the only thing on the menu.
Customer Favorites Include:
🥧 Chicken Pot Pie
🥚 Seasonal Quiches
🍓 Fruit Pies
🧀 Savory Baked Goods
☕ Grab-and-go comfort food meals
Everything starts with high-quality ingredients sourced from local farms and producers.
⭐ The Quiche Everyone Is Talking About
If there's one menu item generating buzz, it's the quiche.
More specifically, it's the famous gluten-free hashbrown crust.
Instead of traditional pastry dough, Wilson uses crispy shredded potatoes to create a golden crust that holds the creamy filling together.
The result is something that's crunchy, savory, and surprisingly addictive.
Even customers who aren't gluten-free are ordering it.
🌱 Local Supporting Local

One of the things that makes Thoughtful Baking Co. special is its commitment to supporting local farms.
The bakery sources ingredients from producers including:
🥚 Two Pigs Farm
🥛 Riverbend Creamery
🥛 Homeland Creamery
Every pie, quiche, and baked good supports a larger network of North Carolina farmers and food producers.
That's part of what makes Charlotte's food scene so unique.
You're not just buying a meal.
You're supporting an entire ecosystem of local businesses.
